A colorful, crisp, and refreshing salad made with fresh vegetables and a zesty vinaigrette. Perfect as a healthy side or a light lunch on a sunny day!

Ingredients
- 2 cups mixed greens (lettuce, spinach, arugula)
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup shredded carrots
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Wash and dry all vegetables thoroughly.
- In a large bowl, combine greens, tomatoes, cucumber, onion, and carrots.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or chill for 10 minutes for extra freshness.
